AUBERGINE is a variable fruit, more or less intense purple, white with white bands purple, yellow, orange or even black. It contains numerous edible seeds of the same color and is consumed as vegetable, fried or battered in slices.

· To oven: Place the aubergines in an oven tray, leave it till it is defrost and introduce it in the oven at medium height. Cook for 10-12 minutes.
· To stir fry: Add 2-3 tablespoons of oil into the saucepan and add the frozen aubergines. Cook on medium heat and stir frequently for 7 minutes.
